Cafe Style Grilled Chicken Sandwiches

This recipe introduced me to one of my family’s favorite way to prepare a fancier sandwich bun. With just a little butter, oil, salt, and garlic powder you can get a nicely toasted bun that pairs great with just about anything. We’ve used this same technique for many other sandwiches.

Cafe Style Grilled Chicken Sandwiches

  • Preheat a grill to medium-high heat. Using a fork, prick the chicken on both sides. In a bowl, combine {{ ingredients[1] }}, 1/4 cup olive oil, the juice of 2 tbsp white wine vinegar, 1 lemon, 1 tbsp garlic and herb seasoning blend, and 1 tsp ground black pepper. Place the chicken in the bowl and let it stand for 10 minutes.
  • Grill the chicken for 10 to 15 minutes until the temperature reaches 165°F. Discard any remaining marinade.
  • Melt 4 ciabatta rolls in a skillet over medium heat. Add 2 tbsp butter, 2 tbsp olive oil, and 1/8 tsp garlic powder. Toast the {{ ingredients[0] }} until golden brown.
  • Cut the grilled chicken in half long ways. Build a sandwitch with the toasted buns, {{ ingredients[0] }}, mayonnaise, sliced BBQ sauce, tomato, and romaine lettuce.
